Voting Process for The Miele Guide

 

As Asia’s first independent restaurant guide, The Miele Guide showcases the best of Asian dining—but only with your help. Your vote is important in ensuring the authenticity and authority of The Miele Guide.

4 Rounds

Four rounds of rigorous and transparent judging are carried out to ensure that only the best restaurants make it into each edition of the guide.
Firstly, an invited panel of Asia’s most influential restaurant critics help to create a shortlist of Asia’s best restaurants.
In the second phase, online public voting opens at www.themieleguide.com. All members of the public with a valid email address are eligible to vote. Registration is done online. Voters can then select what they believe are the best restaurants in their own countries and across Asia. Voters also have the option of nominating restaurants that are missing from the critics’ shortlist.
For the third stage, a select jury of respected foodies and food and wine professionals based across Asia are invited to cast their votes.
In the final round, The Miele Guide’s in-house team, joined by contributing editors stationed across Asia, dine anonymously at the top ranked restaurants to verify our annual ranking of Asia’s top 20 restaurants.
The Miele Guide lists the best restaurants in Asia, as decided by your votes and the votes of our jury. Restaurants that qualify are categorised by country, city and cuisine. In addition, we rank, list and profile in detail the top 20 restaurants in Asia each year and list the top 5 restaurants in each country featured in the guide.
Miele, as the naming sponsor of this guide, does not exert any influence over the selection and judging process that determines which restaurants appear in The Miele Guide. Similarly, none of the other sponsors or partners of The Miele Guide have any influence on which restaurants appear in The Miele Guide. Lastly, The Miele Guide does not accept any sponsorship, advertising, gifts, or free meals from any restaurant in Asia.

MLA Black Box Chef Competition

The Address Triumphs at MLA Chef Competition






The Address proved its young chefs are full of culinary talent after teams from two of the brand’s Dubai hotels took home medals from the Meat and Livestock Australia (MLA) Black Box Culinary Challenge.

Teams of junior chefs from 15 five-star Dubai hotels went head-to-head in the competition, which was held yesterday at Madinat Jumeirah.
The judges had announced the ‘black box’ of mystery ingredients — including Australian beef and lamb, as well as other items from international and local food service companies sponsoring the event — on the previous day (May 31), following which the three-man teams were given one hour to devise a four-course menu and submit their recipe sheets to the judges.
Then on June 1, the teams returned for the real test: cooking their mystery box menu.
After an intense afternoon judging session, each of the 15 teams had to cook their four-course menu again — this time to serve to 30 people at yesterday evening’s competition finale banquet.
Each team served three tables of hungry guests in the Madinat’s Joharah Ballroom, after which the judges announced the winners.
 

The Address Downtown Dubai team emerged victorious, thanks to efforts from Daniel Edward, Manoj Chamara, Rikki Zulfikri and Farid on the culinary team, and Vincent Mafaity, Karin Moller, Dinesh Pitigalage and Intiajuddin Mondal on the service side.
Team captain Daniel Edward commented: “We’re extremely happy to have won the 2010 edition of the Black Box Culinary Challenge.
“I’d like to thank my team for their creativity and for putting their passion and dedication to achieve this amazing result. I also would like to thank Meat and Livestock Australia for providing us with this unique opportunity and for encouraging gastronomy innovation.”
The silver medal went to Emirates Academy of Hospitality Management, and another Address team in third place — from the brand’s Dubai Marina hotel.
Emirates Academy head chef and senior lecturer Michael Kitts said he was delighted with the student team’s placing.
“To come in second place was totally mind blowing, considering the caliber of the competition,” he observed.
Executive pastry chef Martin Chiffers, from The Address Dubai Marina, added: “The MLA Black Box Culinary Challenge offers young chefs the opportunity to learn and develop their skills, and also encourages talented chefs to match their skills with the industry-best and gain a head start in their career.
“What was achieved by The Address Dubai Marina is a clear testament of the talents and creativity of our team of talented professionals.”

Chef Goes Writing

Despite my busy-ness at the kitchen and my family life, I realize I also need a place to write my thoughts into.
With the help of my dear wife who also have passion for writing I created this blog, with the hope that writing will be one of my routine so I will be able to tell you stories about my days at the kitchen.

I am planning not only to write about how I create a menu, a recipe, but here also I am going to tell you the story behind it, the obstacles doing it and of course the result of them all.

The blog might be full only with my complains, my anger, my disappointments, but I might also put my happiness, my satisfaction and my fulfilling days.You just need to come by time to time and see what kind of surprises that a chef can make.

For those who just found how exciting culinary is please drop me an email and I will gladly share my experience with you.
